Spring Recipe Round-up
Spring has sprung and I’m here to help with recipe inspiration. I’ve rounded up some of my favorite “better-for-you” spring recipes to share with those gathering around your table. Grab a recipe below for a week-night pick-me-up, Mother’s day brunch or sunday dinner with family.
Brunch:
Simple: Quiche
Need to feed a handful with minimal prep? Follow the steps below, combining your own favorite inclusions to create a savory and scrumptious meal to start the day well. The sweet potato crust makes this quiche gluten free and adds some extra nutrients! Feel free to cater the ingredients to your needs. Tried and true, this is a no-fail recipe.

Project: Homemade Pop-tarts
If you have a little extra time on your hands OR you’d like a fun project, these homemade poptarts are not only delicious but nostalgic and festive- you can cut them into any shape you’d like and fill with the fruit of your choosing (I’m a strawberry fan). Oh and they are grain and dairy free- but truly delicious, no compromises here.

Lunch:
Simple: Bacon-Wrapped Asparagus
need I say more? Perfect for a meal where you are doing the hosting and need to easily plan portions: every guest gets a bundle of asparagus- easy! Asparagus can sometimes get a bad rep but mingled with the flavors of bacon and balsamic, this may be the secret favorite dish on the table! I sometimes like to grate some parmesan on top to finish! Asparagus says spring and with this recipe, it also says delicious! Bonus points for local asparagus!

Project: Scalloped Potatoes
Traditionally made with a flour roux, this recipe is gluten free and could be modified easily to also be lactose free or dairy free with the addition of your favorite non-dairy cheese subs. I’m thinking unsweetened coconut milk yogurt for creaminess and perhaps a df creamy cheese substitute like from the brand Kite Hill! The longest part about prep is slicing the potatoes- a mandolin could help turn this project into a simple endeavor!

Treats:
Simple: Jello Jigglers
All you need for these satisfying squares to come together is a bit of preemptive planning. Stock up on your favorite fruit juices, and unflavored gelatin- I recommend Vital Proteins Grass-fed Unflavored Gelatin. You will only need 15 minutes of active kitchen time and a few hours in the fridge for the jigglers to set. Cut out jello squares when using a 9x13 pan. A satisfying and special dessert without added sugar? Yes! If you want to get fancy, you can also buy a mold and add freshly slight fruit for a table-top show-stopper.

Project: Homemade Peanut Butter Eggs
Coming off the sugar-rush from Easter, this recipe swap will satisfy your sweet tooth with nourishing simple ingredients! This project has a minimal ingredient list- with better-for-you ingredients than the traditional peanut butter marshmallow fluff filling of years’ past. It’s hard to mess up chocolate and peanut butter! The key here is to whip the filling with a mixer to achieve the right consistency for shaping. Decorate with enjoy life’s dairy free white chocolate or melt down Hu’s baking bits to coat.
