Spring Recipe Round-Up

It’s here! Sunny days with weather that has us inspired- and what better place to be inspired than in the kitchen? We may still be waiting on the spring veggies to come in, but that doesn’t mean we can’t create bright spring dishes in the meantime! Whether you are looking for a weeknight meal, some meal-prepable lunches or an addition to your family’s Easter celebration, we have a few ideas:


Breakfast, brunch or B.F.D. (Breakfast for dinner) this recipe is chock-full… starting with a layer of crispy shredded potatoes, this dish is easily customizable- use the called-for bacon or swap in your favorite protein… or leave it out entirely to let the veggies shine.

Lunch, a creamy spin on a classic- made using Greek yogurt, this cucumber salad is perfect for batch-cooking as the dilly flavor will only be enhanced with a little extra fridge time. Simple, bright ingredients for a side dish that just reads springtime.

Prep this apple pecan chicken salad to eat over greens, on your favorite toasted bread, thinly sliced apples or crackers… however you eat it, it will be just the mid-day pick-me-up you’re craving this time of year! This version is made with only nourishing, minimally processed ingredients you’ll feel great about.

Evening Meals, If you’re like me, maybe you take inspiration from a few similar recipes to make a version of your own! Here are two recipes for pasta primavera… I thinly sliced asparagus into rounds and added petite peas using the burnt butter table’s white wine butter sauce- sans lemon to let the flavor of the veggies shine. Easily sub in your favorite gluten free pasta (I love Jovial’s Brown Rice Capellini) and omit cheese and sub in dairy free butter if needed. Follow the recipe to a ‘T’ or choose your own adventure and combine the two! This is truly the only spring pasta recipe (blueprint) you need.
