Here at Tucker&Co., all of our products are gluten-free, refined sugar-free, and dairy-free or vegan. Today, I wanted to share with you why I make gluten-free products!
In 2018, I changed my sugar filled baked goods business to a refined sugar-free and gluten-free bakery now known as Tucker&Co. Bakery. I also started my gluten-free and refined sugar-free granola brand, Tucker&Co. Granola. What inspired this change? I started to have digestive health issues and decided to follow a specific carbohydrate diet that was gluten-free, dairy-free, and refined sugar-free. It is amazing how much this change helped my digestive health improve!
So what is gluten? Gluten is a "substance present in cereal grains, especially wheat, that is responsible for the elastic texture of dough. It is a mixture of two proteins that can cause illness in people who have celiac disease."
Now, you may be asking, what is celiac disease? According to the Celiac Disease Foundation celiac disease is an "autoimmune disease that occurs in genetically predisposed people where the ingestion of gluten leads to damage in the small intestine." The number of people being diagnosed with gluten continues to rise while many people go undiagnosed.
While I might not have celiac disease, I do have an intolerance to gluten, as many people do. Slowly, there have been more gluten-free products made available but they can still be hard to find. So I decided to take things into my own hands and start making granola and baked goods that can fuel you and comfort you without causing pain!
